It is a sweetened and flavoured emulsion, suitable for special dough, for leavened paste and for the confectionery.
Thanks to its sugar content, and high degree of dispersion and “plasticity” it contributes to the leavening of dough, to the colour and taste of bread.
It gives flavour and fragrance to cooked product and makes soft and golden the crusts of bread.
It is particularly suitable to avoid defects of the dough such as irregular porosity, soft or heavy crumb.
